I used to use a lasso to draw around the part of the image I wanted and crop the rest of the image off. All I can find are set shapes to crop to which are totally rubbish. I need this tool most days in my job so any bit of help appreciated.

In general, your first series of points don't address the issue. The OP has already quoted back the instructions on how to crop -- rewording them [even if done accurately] does no more to resolve the concern than having them quoted in the message does to describe it. In particular;
Your point #1:Double-clicking an image in Office 2011 apps does absolutely nothing more than a single click. Instructing someone to double-click leads them to believe that something will happen differently which causes more confusion when that 'something' doesn't occur.
Your Point #2: The OP has already stated that the Format Picture contextual tab does not appear -- that's the motive for the question.
Your point #4: Holding the Crop button down does not open the dropdown list -- You can click & hold on that button for an hour but it will not produce the menu. Clicking the expansion triangle on the right edge of the button is what opens the list.. and it takes only a single click, there's no need to hold.
Your point #7:.. and everything beyond it are utterly irrelevant. How about resolving the primary issue before making quantum leaps to the use of unrelated features?
